Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Minestrone Soup with Chicken Recipe

  • Tomatoes 12-15 small

  • Chicken mince 1/2 cup

  • Olive oil 1 tablespoon

  • Carrot cut into small pieces 1 medium

  • Garlic chopped 1 1/4 tablespoons

  • Macaroni 2 tablespoons

  • Chicken stock 3 cups

  • Salt to taste

  • Peppercorns crushed 1 teaspoon

  • Fresh basil leaves a few

  • Parmesan cheese powdered to garnish


Step 1

Score the base of the tomatoes and blanch them in plenty of hot water for 2-3 minutes and transfer them immediately to a bowl of cold water. Peel, halve and remove seeds.

Step 2

Divide chicken mince into equal portions and shape into balls. Heat olive oil in a non stick pan. Add garlic, carrot, macaroni and ¾ cup water.

Step 3

Put tomatoes in a blender jar and blend into a puree. Add this to the pan along with chicken stock. Mix and add salt and crushed peppercorns. Stir again, cover and cook till it comes to a boil.

Step 4

Add chicken mince balls and remove scum from the top. Cook till macaroni is just cooked. Tear basil leaves and add. Mix well. Pour soup in serving bowl, sprinkle powdered Parmesan cheese on top and serve hot.
