Ingredients list for Lemony Banana Walnut Cake

  • 4 large Bananas
  • 1 tablespoon Walnuts
  • 5-6 Walnuts chopped
  • 10 tablespoons Butter
  • 400 grams Condensed milk
  • 2 cups Refined flour (maida)
  • 1 teaspoon Baking powder
  • 1 teaspoon Soda bicarbonate
  • 1 teaspoon Vanilla essence
  • 1 to cook Coffee powder
  • 10 tablespoon Milk

Method

  1. Preheat oven to 175°C/350°F. Shell walnuts and coarsely chop them. Cream butter and condensed milk till smooth. Sieve flour with baking powder and soda bicarbonate.
  2. Mix walnuts, vanilla essence, coffee powder and cinnamon in a bowl. Mash the bananas, add lemon juice. Mix it in the nuts mixture. Add the flour mixture alternating with the banana mixture to the butter and condensed milk mixture.
  3. Add milk. Mix lightly. Pour the batter in a buttered, baking dish. Bake in a preheated oven at 175°C/350°F for about one hour. Let it cool in the dish initially and then gently unmould it onto a rack and leave it to cool.
  4. Cut into slices and serve with tea.
