History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Khameeri Roti - SK Khazana Recipe

  • Whole wheat flour 4 cups

  • Dried yeast 2 teaspoons

  • Castor sugar 6 tablespoons

  • Mik 1 cup

  • Fennel (saunf) powder 4 tablespoons

  • Salt to taste

  • Ghee for brushi tablespoons


Step 1

Put yeast in a bowl. Add 4 tablespoons warm water and 1 tablespoon castor sugar, mix and set aside to activate.

Step 2

Mix together milk and remaining castor sugar in another bowl.

Step 3

Sift together wheat flour, fennel powder and salt in the bowl of milk. Add activated yeast and ghee, mix and knead into soft dough. Set aside in a warm place to prove.

Step 4

Preheat oven to 180˚C.

Step 5

Knock back the dough, divide into 4 equal portions and flatten into thick rotis.

Step 6

Transfer the rotis on a baking tray, put in the preheated oven and bake for 15-20 minutes.

Step 7

Brush ghee on the rotis and serve hot.
