Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Khajur Dahi Recipe

  • Dates 20

  • Yogurt 5 cups

  • Green cardamom powder 1/4 teaspoon

  • Yogurt 3 tablespoons

  • Pistachios blanched and sliced 12-15


Step 1

Boil milk and set aside to cool. When it is lukewarm pour it into an earthenware pot. Soak fifteen dates in half a cup of warm water for ten minutes. Drain and grind to a smooth pulp.

Step 2

Cut the remaining dates into thin strips. Add the date pulp to the milk in the earthenware pot and mix well. Add green cardamom powder and mix again. Add yogurt and stir well.

Step 3

Place the pot in warm place till the yogurt is well set. Chill it in the refrigerator. Serve chilled garnished with date strips and pistachio slices.
