Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Khada Masala Chicken Recipe

  • Boneless chicken cut into cubes 800 grams

  • Oil 4 tablespoons

  • Bay leaves 2

  • Mustard seeds 1/4 teaspoon

  • Fennel seeds (saunf) 1/4 teaspoon

  • Onion 1/4 teaspoon

  • Dried red chillies, crushed 2

  • Cumin seeds 1/2 teaspoon

  • Fenugreek seeds (methi dana) 1/4

  • Dried pomegranate seeds (anardana), crushed 1/2 teaspoon

  • Ginger, grated 1 inch piece

  • Garlic, sliced 5-6 cloves

  • Onion , sliced 1 large

  • Green chillies, slit 4

  • Tomato, sliced 1 medium

  • Salt to taste

  • Fresh coriander leaves, chopped 1 tablespoon

Method

Step 1

Heat the oil in a kadai; add the bay leaves, mustard seeds, fennel seeds, onion seeds, crushed red chillies, cumin seeds, fenugreek seeds and pomegranate seeds.

Step 2

When they begin to change colour, add the ginger and garlic. Sauté for half a minute and add the onion and green chillies; sauté over medium heat till the onion turns light brown.

Step 3

Add the tomato, chicken and salt and sauté over medium heat, stirring occasionally, for eight to ten minutes. Once the chicken is almost done, lower the heat, cover and cook for five or six minutes longer.

Step 4

Garnish with coriander leaves and serve hot.
