Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Jacket Chicken Recipe

  • Boneless Chicken cut into big pieces 250 grams

  • Medium onion 1/2 medium

  • Spring onion with greens 2

  • Ginger peeled 1 inch

  • Sliced button mushrooms 1 cup

  • Dark soy sauce 1 tablespoon

  • Hoisin sauce 1 tablespoon

  • Red chilli sauce 2 tablespoons

  • Chilli vinegar 1 teaspoon

  • Sesame oil 2 teaspoons

  • Fresh coriander sprigs 4-5


Step 1

Preheat oven at 180º C.

Step 2

Cut onion into big cubes, roughly chop spring onions with greens, slice ginger and transfer everything into a bowl.

Step 3

Add button mushrooms, chicken pieces, soy sauce, hoisin sauce, red chilli sauce, chilli vinegar and sesame oil and mix well.

Step 4

Roughly tear fresh coriander sprigs and add and mix well.

Step 5

Place 4 pieces of aluminum foil on the worktop. On each piece place a single portion of mushroom-chicken mixture in the center and fold the three open sides and seal.

Step 6

Place the chicken jackets in a cake tin, put the tin in the preheated oven and bake for 30 minutes.

Step 7

Remove from the oven, open the chicken jacket and serve immediately.
