Ingredients list for Indonesian Coconut Rice

  • 1 1/2 cups Jasmine rice washed and drained
  • 2 cups Coconut milk
  • 1 inch Cinnamon
  • 1 inch Lemongrass stalk bruised
  • 1 Bay leaf
  • to taste Salt
  • for garnishing Deep-fried onions

Method

  1. Heat coconut milk in a deep non-stick pan. Add rice and one cup of water and stir well.
  2. Add cinnamon, lemongrass, bay leaf and salt and mix well.Cover and cook on medium heat till the rice is fully done.
  3. Serve hot garnished with fried onions.
