Grilled Spinach Sandwich

Spinach and potato mixture spread over brown bread slices, sprinkled with grated cheese and sesame seeds and grilled. This recipe has featured on the show Khanakhazana.

Ingredients list for Grilled Spinach Sandwich

  • 8 slices Spinach Leaves
  • 4 tablespoons Brown Bread Slices roasted
  • 1/2 medium Spinach finely chopped bundle
  • 2 tablespoons Olive oil
  • 2 medium Onions finely chopped
  • to taste Salt
  • 1 teaspoon Green chilli paste
  • 4 medium Potatoe boiled and mashed
  • 8 teaspoons Green chutney
  • 1 cup Cheese grated
  • 1 medium Red capsicum cut into thin strips seeded

Method

  1. Preheat the oven to the maximum temperature. Heat olive oil in a pan, add onions and sauté till lightly browned. Add spinach and salt and stir. Add green chilli paste and continue to sauté. Add mashed potatoes and mix well.
  2. Arrange brown bread slices on the work top. Spread green chutney on all of them. Spread the potato mixture over the chutney evenly. Sprinkle grated cheese and roasted sesame seeds.
  3. Finally place red capsicum strips decoratively on the top. Place the bread slices on the grill rack in the preheated oven and grill till the bread slices turn crisp. Serve hot.
