Ingredients list for Green Pea and Goat Cheese Risotto

  • 1 cup Fresh green peas puree
  • 2 tablespo for garnish Goat cheese
  • 1 1/2 cups Risotto rice
  • 4 tablespoons Olive oil
  • 3 tablespoons Garlic chopped
  • 1 Medium onion finely chopped
  • 4-6 tablespoons White wine
  • 6 cups Vegetable stock
  • 2 tablespoons Fresh cream
  • 2 tablespoons Butter
  • for garnish Micro greens

Method

  1. Heat olive oil in a deep non-stick pan, add garlic and onion, and sauté till translucent.
  2. Add rice, mix and sauté for 2 minutes. Add white wine and mix well.
  3. Add rice, mix and sauté for 2 minutes. Add white wine and mix well.
    Add vegetable stock and salt and mix well. Cook for 4-5 minutes or till the moisture is almost absorbed, stirring occasionally.
  4. Add green peas puree and mix well. Cook for 10-12 minutes or till the rice is cooked.
  5. Add fresh cream, butter and goat cheese, mix well and cook for 1 minute.
  6. Transfer into a serving bowl, garnish with goat cheese and micro greens and serve hot.
