French cuisine consists of cooking traditions and practices from France. At one time French cuisine was heavily influenced by Italian cuisine.  It was in the 17th century that some chefs led a movement that developed France’s own indigenous style by shifting it away from its foreign influences. Cheese and wine are a major part of the cuisine, playing different roles regionally and nationally, with many variations.
French cuisine was codified in the 20th century as the modern haute cuisine. Knowledge of French cooking has contributed significantly to Western cuisines and its criteria are used widely in Western cookery school boards and culinary education. 
French regional cuisine is characterized by its extreme diversity and style. Traditionally, each region of France has its own distinctive cuisine.

Ingredients for Fruit Tart Recipe

  • Refined flour sifted 1 1/2 cups

  • Sugar 2/3 cup

  • Unsweetened cocoa powder 1/2 cup

  • Salt 1/4 teaspoon

  • Unsalted butter frozen 150 grams

  • FOR FILLING

  • Orange jelly 1/4 cup

  • Lemon juice 1/2 tablespoon

  • Whipping cream 1 cup

  • Mixed fruits 350 grams

Method

Step 1

Grease an eleven-inch diameter springform tart pan with butter. In a food processor add and mix together flour, sugar, cocoa powder, salt and blend for five seconds. Add butter, cut into small pieces and blend till you get a moist sandy texture.

Step 2

Add one and a half tablespoons of chilled water and blend until the dough comes together. Press evenly onto the bottom and up the sides of the prepared pan and prick it all over with a fork. Refrigerate for thirty minutes.

Step 3

Preheat oven to 175ºC/350ºF/Gas Mark 4. Blind bake the crust for around fifteen minutes in the preheated oven or until it looks dry and slightly puffed up. Take it out of the oven and set aside to cool.

Step 4

Melt orange jelly with lemon juice and brush a thin layer over the base of the tart. Whip the cream and spread a thin layer over the jelly. Arrange the fruits on top and brush with the jelly glaze over them.

Step 5

Cut into wedges and serve immediately.
