Ingredients list for Fortune Cookies
- 1 cup Refined flour (maida)
- 1/4 cup Rice flour
- 1 cup Castor sugar (caster sugar)
- 2 teaspoons Cornstarch
- 4 Eggs
- tablespoons Olive oil ¼ cup + 2
- a few drops Vanilla essence
Method
- Preheat oven at 180ºC. Line a baking tray with a silicon mat.
- Combine refined flour, rice flour, castor sugar and cornstarch in a bowl and mix well.
- Separate eggs whites from the yolks and place the whites in another bowl, whisk well.
- Add olive oil, vanilla essence and ½ cup water to the flour mixture and mix well.
- Add half the egg whites and fold well. Add remaining egg whites and fold again into a smooth batter.
- Fill the batter into a piping bag and pipe out small diskettes on the silicon sheet. Use a spoon to thin out the edges. Put the tray in the preheated oven and bake for 8-10 minutes.
- Flip the diskettes, place fortune slips in the centre, bring the other edge over and bend the cookies lightly over the rim of a glass.
- Serve.
