Ingredients list for Eggwhite Bolognaise

  • 1 cup Fettuccine boiled
  • 2 Eggs boiled and peeled
  • 1 tablespoon Oil
  • 1 tablespoon Garlic chopped
  • 2 medium Onions chopped
  • 2 medium Tomatoes blanched and chopped
  • 1/2 cup Tomato puree
  • to taste Salt
  • to taste Black peppercorns
  • 1/2 teaspoon Red chillies crushed
  • 1 teaspoon Oregano
  • for sprinkling Parmesan cheese

Method

  1. Heat 1 tbsp oil in a non stick pan, add garlic and sauté for 2 minutes. Add onion and sauté till soft.
  2. Halve boiled eggs, discard yolks and chop whites roughly.
  3. Add tomatoes, tomato puree and salt to the pan and mix well. Add crushed peppercorns, crushed red chillies, oregano and 4-5 tbsps water. Mix and cook for 5 minutes.

  5. Add fettucine and tomato sauce. Mix well and toss for a minute.
  6. Serve hot sprinkled with parmesan cheese shavings.
