Ingredients
- 1 cup boiled fettuccine
- 2 eggs, boiled and peeled
- 1 tablespoon oil
- 1 tablespoon chopped garlic
- 2 medium onions, chopped
- 2 medium tomatoes, blanched and chopped
- 1/2 cup tomato puree
- Salt to taste
- Black peppercorns to taste
- 1/2 teaspoon crushed red chillies
- 1 teaspoon oregano
- Parmesan cheese for sprinkling
Method
- Heat 1 tbsp oil in a non stick pan, add garlic and sauté for 2 minutes. Add onion and sauté till soft.
- Halve boiled eggs, discard yolks and chop whites roughly.
- Add tomatoes, tomato puree and salt to the pan and mix well. Add crushed peppercorns, crushed red chillies, oregano and 4-5 tbsps water. Mix and cook for 5 minutes.
- Add fettucine and tomato sauce. Mix well and toss for a minute.
- Serve hot sprinkled with parmesan cheese shavings.
