Ingredients list for Eggs Fritura
- 4 slices Brown bread
- 2 tablespoons Eggs
- 1/2 Onion chopped
- 1 Green capsicum seeded and chopped
- 1 Tomato seeded and chopped
- to taste Salt
- to taste Black peppercorns freshly gorund
- 2 tablespoons Oil
- 4 Eggs
- 4 tablespoons Cheddar cheese
Method
- Toast the bread slices. Keep them warm. Heat butter (or oil), add chopped onion and sauté slightly. Add chopped capsicum and continue to sauté. Add chopped tomatoes. Add salt and crushed pepper and mix well.
- Heat a little oil in another pan. Break an egg into a bowl and slowly pour into the hot pan. Fry. Place a toast in a plate, spread the cooked vegetables over it. Place the fried egg over it. Sprinkle a little salt and freshly ground pepper.
- Sprinkle grated cheese and chopped parsley and grill it for about one minute. Similarly prepare the other toasts and serve hot.
