You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Nargisi Kofta Recipe

  • Eggs 4

  • White bread Slices 2 slices

  • Ghee 2 tablespoons

  • Onion ,minced 1 medium

  • Green chillies,minced 2

  • Salt to taste

  • Tomatoes blanched and peeled chopped 2 medium

  • Fresh coriander leaves chopped 4 sprigs

  • Garam masala powder 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Black pepper powder to taste

Method

Step 1

Place eggs in a pan with three cups of water. Boil for ten minutes and let cool. Shell and keep aside.

Step 2

Crumble bread slices and soak in cold water till soft. Drain and squeeze out all the liquid and mash well with a fork.

Step 3

Cut the eggs lengthwise, and remove the yolks. Mash the egg yolks, add mashed bread and one tablespoon of melted ghee. Stir in a little of the minced onion, minced green chillies, a pinch of salt and mix well. Stuff this mixture in the hollow of the egg white and place the stuffed eggs carefully in an ovenproof dish. Preheat oven to 180˚C.

Step 4

To make the tomato sauce, fry remaining minced onion in remaining ghee till the colour turns pink. Add tomatoes, coriander leaves, garam masala powder, red chilli powder, salt and pepper powder to taste. Simmer till the sauce is cooked. Pour the tomato sauce over the stuffed eggs. Cover the dish and bake in the preheated oven for ten minutes at 180˚C.

Step 5

Serve hot.
