Dahi Ma Bheeda

Sautéed okra or bhindi, tempered with ginger-garlic paste and cooked with yogurt and basic Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 500 grams okra
  • Salt to taste
  • 3 tablespoons oil
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 350 grams yogurt, beaten

Method 

  1. Remove the head of okra and cut into ½ inch slices. Sprinkle with little salt and mix lightly. Heat oil in a pan and sauté till crisp. Colour should not change. Remove on a kitchen paper when done.
  2. In the same oil add ginger-garlic paste and sauté. Add the spices and sauté for half minute. Remove the pan from the heat and add yogurt and simmer for few minutes. Add okra seasoned with salt. Simmer for 3-4 minutes.
  3. Serve hot with roti or rice.
