Ingredients 

  • 400 grams boneless chicken, cut into thick strips
  • 1 tablespoon curry powder
  • 2 pita breads
  • 2 tablespoons oil
  • 1 medium onion chopped
  • 10-12 garlic cloves chopped
  • ½ cup chicken stock
  • 3 teaspoons chilli sauce
  • 2 fresh thyme sprigs
  • Salt to taste
  • 5-6 spring onion bulbs
  • 4 tablespoons yogurt

Method

  1. Heat a non-stick pan and heat the pita breads in it.
  2. Heat oil in a pan, add onion and garlic and saute for 1 minute. Add chicken and curry powder and mix. Add chicken stock, mix and cook and 2 minutes.
  3. Add chilli sauce and thyme and mix. Add salt and mix. Reduce the heat and cook till the chicken is done.
  4. Halve the pita breads and open out the pockets. Roughly slice spring onion bulbs.
  5. Stuff chicken equally into pita pockets. Drizzle 1 tbsp yogurt, a few drops of chilli sauce and sprinkle a few spring onion slices over the chicken in each pocket and serve immediately.
