Ingredients for Crunchy Caramel Sundae Recipe

  • Vanilla ice cream 500 millilitres

  • Butter 2 tablespoons

  • Sugar 4 tablespoons

  • Apricots or peaches 1 tin

  • Muesli,toasted 1 cup

  • Walnut kernels coarsely crushed 10-12

  • Dry coconut (khopra) thinly shredded and toasted 1/2 cup

Method

Step 1

Place sugar in a small thick bottomed pan with two tablespoons of water and keep on low heat till it begins to change colour. Stir continuously and as it begins to caramelize add butter. Remove from heat.

Step 2

Drain fruit and cut into small cubes. Take a tall glass and place one scoop of ice cream. Top with two tablespoons of chopped fruit and half a tablespoon of caramel mixture. Top with a small scoop of ice cream.

Step 3

Sprinkle a little muesli, walnut kernels and drizzle one tablespoon of caramel mixture. Decorate with toasted shredded coconut and serve immediately. Make other sundaes in the same way.
