Ingredients list for Cold Cucumber Soup

  • 8 medium Cucumber peeled
  • 4 inch piece Ginger chopped
  • 8 Green chillies chopped
  • to taste Salt
  • 4 cups Buttermilk
  • 1 teaspoon White pepper powder
  • 2 tablespoons Lemon juice
  • 1 Red capsicum finely chopped

Method

  1. For each portion halve 2 cucumbers lengthways and scoop out the seeds.
  2. Cut into chunks and put in a blender jar.
  3. Add 1 ginger, 2 green chillies, salt, 1 cup buttermilk and blend to a fine puree.
  4. Add ¼ tsp white pepper powder and ½ tbsp lemon juice and blend again.
  5. Pour into a soup bowl, sprinkle some red capsicum and chill in a refrigerator. Serve chilled.
