Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Coconut and Lemon Flavoured Chicken Soup Recipe

  • Coconut milk 1/4 cup

  • Boneless chicken breasts cut into cubes 2

  • Oil 1 tablespoon

  • Garlic cloves chopped 4-5

  • Onion chopped 1 medium

  • Lemon grass stalk 2

  • Kaffir lime leaves 2-3

  • American corn kernels 1/2 cup

  • Chicken stock 3 cups

  • Salt to taste

  • Crushed black peppercorns 1/2 teaspoon

  • Spring onions 1-2


Step 1

Heat oil in a non-stick pan. Add garlic and onion and sauté for a while.

Step 2

Slice lemon grass and add. Sauté well.

Step 3

Add kaffir lime leaves, chicken, sauté for 2 minutes. Add corn and sauté for 1 minute.

Step 4

Add chicken stock, stir to mix and bring to a boil.

Step 5

Add coconut milk, lemon juice, salt and crushed peppercorns. Mix well and simmer for a minute.

Step 6

Pour soup in a serving dish and garnish with chopped spring onions. Serve hot.
