Ingredients
- 3-5 chorizo deskinned
 - 1 medium sweet potato, peeled and cut into ½ inch cubes
 - 4 tortillas
 - 2 tablespoons oil
 - 2 garlic cloves minced
 - 1 small onion, finely chopped
 - 2 jalapenos fresh, seeded and chopped
 - 1 cup arrabiata sauce
 - 1 cup processed cheese, grated
 
Method
- Preheat oven to 180°C. Grease a casserole with some oil.
 - Heat oil in a non-stick pan, add garlic and sauté for a minute.
 - Add onion, mix and sauté till translucent. Add jalapenos, mix and sauté for a minute
 - Add sweet potato, mix well and cook on medium heat till soft. Add chorizo, mix and cook till they turn brown. Remove from heat and set aside.
 - Spread this mixture on each tortilla. Fold in the ends and roll up around the filling.
 - Place these roll-ups in the greased casserole. Pour the Arrabiata sauce over them and top with cheese. Place the casserole in the preheated oven and bake till the cheese melts.
 - Serve hot.
