Ingredients for Choco Almond Cookies Recipe

  • Almonds blanched 75 grams

  • Icing sugar 1¾ cups + for dusting

  • Cocoa powder 1 tablespoon

  • Dark chocolate 50 grams

  • Egg white 1

  • Vanilla essence ½ teaspoon


Step 1

Preheat the oven to 100ºC.

Step 2

Toast the almonds in the preheated oven for five minutes. Remove from oven and cool.

Step 3

Grind together the toasted almonds and two tablespoons icing sugar into a coarse powder.

Step 4

Sieve together the remaining icing sugar and cocoa powder into a bowl. Add the ground almonds and mix.

Step 5

Melt the chocolate in a microwave. Remove from heat and stir till smooth.

Step 6

Whisk together the egg white in another bowl till it forms stiff peaks. Add the vanilla essence and beat.

Step 7

Add the beaten egg whites in the almond mixture and fold well. Add the melted chocolate and mix. Cover with a cling film and chill overnight.

Step 8

Preheat the oven to 160º C. Line a baking tray with parchment paper.

Step 9

Take the dough out of the fridge and leave it at room temperature till it softens.

Step 10

Dust the worktop with some icing sugar, place the dough on it and roll into a sausage. Cut it into sixteen pieces and shape them into balls.

Step 11

Spread some icing sugar on a plate. Coat the balls with the icing sugar and put them on the lined baking tray. Flatten them a little.

Step 12

Put the tray in the preheated oven and bake for eighteen to twenty minutes. Remove from oven and cool.

Step 13

Serve or store in an airtight container.
