Ingredients 

  • 3 tablespoons red chilli sauce
  • 1 teaspoon red chilli powder
  • 2 tbsps schezwan sauce + to garnish 
  • 1 cup brown Bengal gram (kala chana) , soaked overnight and boiled
  • 2 medium potatoes (aloo) , boiled and peeled
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon finely chopped garlic  
  • 1 tablespoon finely chopped ginger 
  • 1 medium onion , finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 2 tbsps roughly chopped spring onion greens + to garnish  
  • Fried noodles to garnish

Method

  1. Heat oil in a non-stick pan, add cumin seeds, garlic and ginger, mix well and sauté for 2 minutes. Add onions, mix and sauté till translucent.
  2. Cut potatoes into small cubes, add and cook for 1-2 minutes.
  3. Add red chilli sauce, soy sauce, vinegar, red chilli powder, Schezwan sauce and brown Bengal gram, mix well and cook for 1-2 minutes.
  4. Add spring onion greens and toss.
  5. Transfer into a serving bowl, garnish with spring onion greens, Schezwan sauce and fried noodles and serve hot.
