Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Chicken Tikka Bites - SK Khazana Recipe

  • Chicken leg boneless, cut into 1 inch pieces 500 grams

  • Salt to taste

  • Ginger paste 1/2 tablespoon

  • Garlic powder 1 teaspoon

  • Egg white 1

  • Red chilli paste 1 1/2 tablespoons

  • Carom seeds 1/4 teaspoon

  • Dried fenugreek leaves powder 1/4 teaspoon

  • Hung yogurt 1 1/2 tablespoons

  • Lemon 1/2

  • Dried breadcrumbs for coating

  • Oil for deep frying

  • Mayonnaise to serve


Step 1

Take chicken pieces in a large bowl, add salt, ginger paste, garlic powder, egg white, red chilli paste, carom seeds, dried fenugreek leaf powder and hung yogurt. Squeeze the juice of ½ lemon and mix well. Set aside to marinate for 15-20 minutes.

Step 2

Heat sufficient oil in a kadai.

Step 3

Take dried bread crumbs on a plate, coat each chicken piece with it, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.

Step 4

Transfer the chicken bites into a serving bowl and serve hot with mayonnaise.
