Cheese Swiss Fondue Fondue is a Swiss communal dish shared at the table in an earthenware pot over a small burner . A cheese mix in the pot is kept warm as a semi-liquid sauce into which diners use forks to dip bits of food, most often bread. This is a Sanjeev Kapoor exclusive recipe. Pour in wine and lemon juice and heat gently until bubbling. Reduce the heat to low and gradually stir in grated cheese. Continue to heat until cheese melts, stirring frequently. In a small bowl, blend cornstarch smoothly with three tablespoons of wine, then stir into cheese mixture and continue to cook, stirring constantly, for two to three minutes until mixture is thick and smooth. Mix in nutmeg powder. Do not allow fondue to boil. Take a fondue pot and pour in the sauce. Switch it on. To serve, fork up a piece of French bread on a fondue fork and dip into the fondue.
