Cheese Cigars With Pesto

Flat bread slices stuffed with cheese and egg, rolled in the shape of cigar, deep fried and served with pesto sauce . This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Cheese Cigars With Pesto

  • 12 slices White Bread Slices
  • 2 teaspoons Processed Cheese
  • 1/2 cup Processed cheese grated
  • 1/2 cup Mozzarella cheese grated
  • 1 tablespoon Chives snipped
  • 1 teaspoon Cayenne pepper
  • 1 Egg lightly beaten
  • 10-12 Fresh basil leaves
  • a few Fresh parsley sprigs
  • 5-6 cloves Garlic
  • 1/4 cup Pine nuts(chilgoza)
  • to taste Salt
  • 1 tablespoon Olive oil

Method

  1. To make pesto sauce, wash and drain basil leaves and fresh parsley. Peel and wash garlic. Peel pinenuts. Blend these adding salt and olive oil to make a smooth sauce.
  2. Remove crusts and roll bread slices with a rolling pin to flatten as much as possible. Combine mustard, processed and mozzarella cheese, chives and cayenne pepper.
  3. Spread a little of the cheese mixture over half of each bread slice, brush the remaining half side with egg. Roll the slice up tightly using egg to seal. Similarly prepare the cigars with the remaining bread slices.
  4. Heat oil in a pan, and deep fry the cigars a few at a time until golden. Drain onto an absorbent paper and serve hot with pesto.
