Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheese And Veggie Kabab Recipe

  • Feta Cheese cut into bite sized pieces 200 grams

  • Bell Pepper cut into bite sized pieces 1/4 medium

  • Yellow capsicum cut into bite sized pieces 1/4 medium

  • Zucchini cut into bite sized pieces 1 medium

  • Brinjal cut into bite sized pieces 1/4

  • Fresh thyme for garnishing

  • Marinade

  • Olive oil 1 1/2 tablespoons

  • Vinegar 1 tablespoon

  • Crushed black peppercorns 1 teaspoon

  • Honey 1 teaspoon

  • Dijon mustard 1/2 teaspoon

  • Fresh thyme chopped 2 teaspoons

  • Salt to taste


Step 1

To make the marinade, combine olive oil, vinegar, black peppercorns, honey, mustard, thyme and salt in a bowl. Mix well.

Step 2

Add the feta cheese, both the capsicums, zucchini and brinjal pieces in the marinade. Stir to coat well, cover with a plastic wrap and set in the refrigerator for one hour.

Step 3

Heat the Grill Pan. Thread one piece of each of the ingredient onto a wooden skewer and place in the grill pan.

Step 4

Cook for two to three minutes or till vegetables are tender. Serve hot garnished with thyme sprigs.
