Ingredients list for Cauliflower Fritters With Tomato Relish
- 1 small Cauliflower
- 1 cup Tomato
- 1/4 cup Refined flour (maida)
- a pinch Soda bicarbonate
- 1 Egg
- to taste Salt
- 2 tablespoons Oil to deep fry
- 2 medium Onions
- 4 large Tomatoes chopped
- 3 cloves Garlic crushed
- 1/4 cup White wine vinegar
- 1 teaspoon Cumin seeds crushed
- 1/4 cup Sultanas
- 1 tablespoon Fresh coriander leaves
Method
- In a large bowl combine cornstarch, refined flour, soda bicarbonate, egg and salt. Add a little water and whisk to obtain a smooth batter. Let it stand for fifteen minutes.
- Place onions, tomatoes, garlic, oil, wine vinegar, cumin seeds, sultanas and salt in a pan. Bring to boil, reduce heat, cover and continue to simmer for fifteen to twenty minutes or till the mixture has thickened, stirring occasionally.
- Remove from heat, stir in the coriander leaves. Heat sufficient oil in a deep pan. Dip cauliflower florets in the prepared batter and deep fry till golden crisp. Drain onto an absorbent paper. Serve hot with tomato relish.
