Cauliflower Fritters With Tomato Relish

Florets of cauliflower batter fried till crisp and served with sweet and sour tomato relish. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Cauliflower Fritters With Tomato Relish

  • 1 small Cauliflower
  • 1 cup Tomato
  • 1/4 cup Refined flour (maida)
  • a pinch Soda bicarbonate
  • 1 Egg
  • to taste Salt
  • 2 tablespoons Oil to deep fry
  • 2 medium Onions
  • 4 large Tomatoes chopped
  • 3 cloves Garlic crushed
  • 1/4 cup White wine vinegar
  • 1 teaspoon Cumin seeds crushed
  • 1/4 cup Sultanas
  • 1 tablespoon Fresh coriander leaves

Method

  1. In a large bowl combine cornstarch, refined flour, soda bicarbonate, egg and salt. Add a little water and whisk to obtain a smooth batter. Let it stand for fifteen minutes.
  2. Place onions, tomatoes, garlic, oil, wine vinegar, cumin seeds, sultanas and salt in a pan. Bring to boil, reduce heat, cover and continue to simmer for fifteen to twenty minutes or till the mixture has thickened, stirring occasionally.
  3. Remove from heat, stir in the coriander leaves. Heat sufficient oil in a deep pan. Dip cauliflower florets in the prepared batter and deep fry till golden crisp. Drain onto an absorbent paper. Serve hot with tomato relish.
