Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Cauliflower Fritters With Tomato Relish Recipe

  • Cauliflower 1 small

  • Tomato 1 cup

  • Refined flour (maida) 1/4 cup

  • Soda bicarbonate a pinch

  • Egg 1

  • Salt to taste

  • Oil to deep fry 2 tablespoons

  • Onions 2 medium

  • Tomatoes chopped 4 large

  • Garlic crushed 3 cloves

  • White wine vinegar 1/4 cup

  • Cumin seeds crushed 1 teaspoon

  • Sultanas 1/4 cup

  • Fresh coriander leaves 1 tablespoon


Step 1

In a large bowl combine cornstarch, refined flour, soda bicarbonate, egg and salt. Add a little water and whisk to obtain a smooth batter. Let it stand for fifteen minutes.

Step 2

Place onions, tomatoes, garlic, oil, wine vinegar, cumin seeds, sultanas and salt in a pan. Bring to boil, reduce heat, cover and continue to simmer for fifteen to twenty minutes or till the mixture has thickened, stirring occasionally.

Step 3

Remove from heat, stir in the coriander leaves. Heat sufficient oil in a deep pan. Dip cauliflower florets in the prepared batter and deep fry till golden crisp. Drain onto an absorbent paper. Serve hot with tomato relish.
