Ingredients for Broccoli and Toasted Almond Soup Recipe

  • Broccoli separated into small florets 400 grams

  • Almonds roasted and slivered 10-12

  • Onion 1 medium

  • Vegetable stock 4 cups

  • Garlic cloves roughly chopped 4

  • Celery chopped 2 inch stalk

  • Salt to taste

  • White pepper powder to taste

  • Skimmed milk 1 cup

Method

Step 1

Roughly chop onion.

Step 2

Pour vegetable stock in a deep non-stick pan, add onion, garlic and celery and bring the mixture to a boil.

Step 3

Add broccoli florets and continue to cook without covering the pan. Cook for 5-7 minutes or till broccoli is just done.

Step 4

Add salt and white pepper powder and mix well. Remove from heat, cool and puree it in a blender.

Step 5

Add milk to pureed broccoli mix well. Bring it to a boil again.

Step 6

Stir in toasted almond slivers and serve hot.
