Ingredients list for Broccoli and Toasted Almond Soup

  • 400 grams Broccoli separated into small florets
  • 10-12 Almonds roasted and slivered
  • 1 medium Onion
  • 4 cups Vegetable stock
  • 4 Garlic cloves roughly chopped
  • 2 inch stalk Celery chopped
  • to taste Salt
  • to taste White pepper powder
  • 1 cup Skimmed milk

Method

  1. Roughly chop onion.
  2. Pour vegetable stock in a deep non-stick pan, add onion, garlic and celery and bring the mixture to a boil.
  3. Add broccoli florets and continue to cook without covering the pan. Cook for 5-7 minutes or till broccoli is just done.
  4. Add salt and white pepper powder and mix well. Remove from heat, cool and puree it in a blender.
  5. Add milk to pureed broccoli mix well. Bring it to a boil again.
  6. Stir in toasted almond slivers and serve hot.
