Ingredients for Broccoli & Cheese Soup Recipe

  • Broccoli 2 medium

  • Bocconcini , small pieces 8-12

  • Butter 3 tablespoons

  • Onion 1 medium

  • Onion 1 medium

  • Garlic 8-10 cloves

  • Salt to taste

  • Black peppercorns , crushed to taste

  • Milk 1 cup

  • Olive oil 2 teaspoons

  • Bread slices to serve

  • Fresh parsley sprig to garnish


Step 1

Separate small florets from broccoli and discard their stems.

Step 2

Put butter in a soup maker. Roughly chop onion and add. Add garlic cloves, broccoli florets, vegetable stock, salt and crushed black peppercorns and cover with the lid.

Step 3

Select the desired option and let it cook for 4-6 minutes.

Step 4

Remove the lid and add milk, cover with lid, select the option and cook till the soup is done.

Step 5

Heat oil in a non-stick pan, keep the bread slices in it and cook, turning sides, till crisp on both sides. Keep them on a plate.

Step 6

Place 2-3 bocconcini pieces at the bottom of each serving bowl and pour the soup over. Garnish each bowl with a fresh parsley sprig and serve hot with toasted bread slices.
