How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Boa Loy Recipe

  • Rice Flour 1 cup

  • Coconuts 1/2 cup

  • Coconut milk 2 cups

  • Salt a pinch

Method

Step 1

Place the rice flour in a bowl, add half cup of hot water and knead into a dough ensuring that the dough does not stick to your hand. Add more flour or hot water as needed.

Step 2

Boil plenty of water in a deep pot. It is similar to cooking pasta. Pinch off the dough and roll it into a small balls in your palms and drop them into the boiling water.

Step 3

The balls will start rising to the top when it is cooked. Drain and set aside. Combine sugar, coconut milk and salt and heat the mixture on medium heat till the sugar dissolves. Add the cooked rice balls and serve hot.
