Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Bao - SK Khazana Recipe

  • Refined flour (maida) 2 cups + for dusting

  • Fresh yeast 2 teaspoons

  • Salt 1 teaspoon

  • Baking powder 1/4 teaspoon

  • Milk powder 2 tablespoons

  • Castor sugar 1 tablespoon

  • Melted butter 3 tablespoons

Method

Step 1

Put yeast in a bowl. Add some warm water, mix and set aside to activate.

Step 2

Sift together flour, salt and baking powder into a bowl. Add milk powder and castor sugar and mix well.

Step 3

Add activated yeast and mix. Add sufficient water, mix and knead into a soft dough. Add melted butter and knead again. Cover with a damp muslin cloth and set aside to prove for 20-25 minutes.

Step 4

Knock back the dough.

Step 5

Spray some oil on the worktop. Place the dough on it and roll out into a thick disc. Cut out small roundels with a small cookie cutter.

Step 6

Spray some oil on them and fold each roundel into half keeping a piece of butter paper in between. Flatten a bit and set aside to prove for 5 minutes.

Step 7

Heat sufficient water in a large pan. Place the baos in a bamboo steamer, keep the steamer in the pan and steam for 3-5 minutes.

Step 8

Remove the butter paper and use as required.
