Ingredients list for Banana French Toast
- 1 cup Banana Puree
- 8 Brown Bread Slices
- 4 Eggs
- 1/2 cup Castor sugar
- 1 teaspoon Vanilla essence
- 1 tablespoon Fresh cream
- 2 cups Cornflakes crushed
- 1 tablespoon Oil
- 1/4 cup Icing sugar
- 1/4 teaspoon Cinnamon powder
Method
- Break eggs into a bowl, add banana puree, castor sugar and vanilla essence and whisk well. Add fresh cream and whisk again.
- Spread cornflakes on a plate.
- Dip 4 bread slices in the egg mixture, coat them with cornflakes and place them on a plate. Repeat the process with the remaining 4 slices and place them over the slices on the plate and press lightly.
- Heat oil in a non-stick pan, place the sandwiches in the pan and shallow-fry, turning sides, till evenly cooked and golden on both sides.
- Mix icing sugar and cinnamon powder in a bowl.
- Halve each banana French toast, arrange them on a serving plate, dredge sugar mixture on top and serve immediately.
