Ingredients list for Apricot Icecream

  • 1 cup Dried apricots soaked in warm water
  • 100 grams Sugar
  • 4 Egg yolks
  • 350 millilitres Cream
  • For praline
  • 100 grams Almonds chopped
  • 100 grams Sugar

Method

  1. Puree apricots and put into a non-stick pan. Add sugar and cook, stirring, for five minutes.
  2. Put egg yolks in a bowl and beat well, add apricot puree and whisk till thick.
  3. Cool and add cream and mix well.
  4. Pour into an icecream box, close with the lid and freeze, beating at regular intervals (so as to prevent formation of ice crystals) until set.
  5. Serve with praline.
  6. To make praline, melt sugar in a heavy non-stick pan. Add almonds, mix and cook over a low heat for about ten minutes. Pour into an oiled tray and let it set.
  7. Crush with a rolling pin and sprinkle over ice cream before serving.
