Ingredients
- 2 cups fresh green peas
- ½ cup mint leaves
- 2 teaspoons butter
- 1 tablespoon chopped garlic
- 1 small onion, chopped
- 2-3 fresh thyme sprigs
- Salt to taste
- 4 cups vegetable stock + to adjust consistency
- Black pepper powder to taste
- Fresh cream for garnish
Method
- Heat butter in a non-stick wok, let it melt. Add garlic and sauté till golden brown.
- Add onion and sauté till translucent. Add fresh thyme sprigs, green peas and salt, mix well.
- Add vegetable stock and let it come to a boil. Reduce the heat and cook till the peas are soft and cooked. Discard the thyme sprigs.
- Take it off the heat, add mint leaves and allow the mixture to cool slightly. Transfer mixture in a blender jar and blend to a fine puree.
- Add the puree into the same pan and place it back on heat. Add stock to adjust the consistency.
- Add black pepper powder and mix well. Let the soup come to a boil.
- Garnish with fresh cream and serve hot.
