Raitua (Doodhi Chaas) This unique chaas recipe from certain parts of Uttar Pradesh, is made with bottle gourd. This is a cooling and refreshing drink especially made during summer. Bottle gourd has cooling properties and also low in calories. By Sanjeev Kapoor 17 Aug 2024 in Recipes Beverages New Update Raitua (Doodhi Chaas) Main ingredients Bottle gourd (doodhi), Yogurt, Roasted cumin powder, Asafoetida, Black salt Cuisine Uttar Pradesh Courseq Beverages Prep time 5-10 minutes Cook time 5-10 minutes Serve 4 Taste Savoury Level of cooking Easy Others Vegetarian Ingredients 250 grams bottle gourd (doodhi), peeled and grated 2 cups chilled yogurt 1 teaspoon roasted cumin powder ¼ teaspoon asafoetida (hing) Black salt to taste Method Boil water in a deep non-stick pan. Add grated bottle gourd and cook for 2-3 minutes. Drain in chilled water and set aside. Take yogurt in a bowl, add roasted cumin powder, asafetida and black salt and whisk well. Squeeze excess water from boiled bottle gourd and add to the yogurt. Add 3 cups chilled water and mix well.
