Ingredients
- 2 medium pears, seeded and roughly chopped
- A dash of lemon juice
- 8 lemon wedges
- 16-20 fresh mint sprigs
- 4 tablespoons sugar syrup
- Ice cubes as required
- Drinking soda as required
- Pear slices for garnish
- Lemon slices for garnish
Method
- Put the pears in a blender jar, add ½ cup water and grind to fine paste. Strain the juice through a fine strainer.
- Place the lemon wedges equally in 4 individual glasses. Add mint sprigs and muddle with a muddler.
- Add the pear juice and sugar syrup and mix well.
- Add ice cubes, top up with soda and stir well.
- Serve chilled garnished with pear slices and lemon slices immediately.
