Ingredients
- 1 cup fine semolina (barik rawa)
- 2 tsps ginger-green chilli paste
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ¼ tsp turmeric powder
- Salt to taste
- Oil for greasing + for deep frying
- Chai to serve
Method
- Put the semolina in a mixer jar and grind to a fine powder. Transfer into a large bowl.
- Add ginger-green chilli paste, red chilli powder, coriander powder, cumin powder, turmeric powder and salt and mix well.
- Add ½ cup water and knead to a soft dough. Cover with a damp muslin cloth an set aside for 10-15 minutes.
- Grease the worktop with some oil.
- To make puris, take a small portion of the dough and shape it into a ball. Place it on the greased worktop and flatten it slightly. Roll it into a small thin disc.
- Heat sufficient oil in a kadai.
- Gently slide in the discs one at a time into the hot oil and deep fry till they turn crisp and puff up. Drain on an absorbent paper.
- Serve hot with chai.
