Ingredients
- 1 cup unsweetened ripe mango pulp
- 8-10 blue pea flowers + for garnish
- ½ cup castor sugar
- 2 lemons, halved
- 8 tablespoons sugar syrup
- Ice cubes as required
- Drinking soda as required
Method
- Pour 2 cups hot water into a glass jar, add blue pea flowers and set aside for 8-10 minutes.
- Take sugar in a bowl. Strain ½ cup of the prepared blue pea water into this bowl and stir till sugar melts. Transfer into a pan and cook till thick. Set aside to cool completely.
- Add equal amounts of mango pulp into 4 serving glasses. Squeeze half lemon into each glass. Add 2 tablespoons sugar syrup into each glass and stir.
- Add ice cubes and pour equal portions of the remaining blue pea mixture into each glass.
- Top up each glass with soda, garnish with blue pea flowers and serve chilled.
