Heat sufficient water in a deep pan, cover and let it come to a rolling boil. Add the spinach leaves and let them cook for 20 seconds only. Strain the spinach leaves and squeeze out excess water and immediately transfer into a bowl of ice cold water. This will stop further cooking and the bright emerald colour of the spinach leaves will be retained. Separate the leaves to help them cool faster.
