Ingredients
- 1 large bunch of fresh spinach leaves
Method
- Trim the stems of the spinach leaves as they are fibrous and will not blend into a smooth consistency even after blanching.
- Heat sufficient water in a deep pan, cover and let it come to a rolling boil.
- Add the spinach leaves and let them cook for 20 seconds only.
- Strain the spinach leaves and squeeze out excess water and immediately transfer into a bowl of ice cold water.
- This will stop further cooking and the bright emerald colour of the spinach leaves will be retained.
- Separate the leaves to help them cool faster.
- Drain the leaves and blend to a smooth paste and use as required.
