Ingredients

  • 1 large bunch of fresh spinach leaves

 

Method

  1. Trim the stems of the spinach leaves as they are fibrous and will not blend into a smooth consistency even after blanching.
  2. Heat sufficient water in a deep pan, cover and let it come to a rolling boil.
  3. Add the spinach leaves and let them cook for 20 seconds only.
  4. Strain the spinach leaves and squeeze out excess water and immediately transfer into a bowl of ice cold water.
  5. This will stop further cooking and the bright emerald colour of the spinach leaves will be retained.
  6. Separate the leaves to help them cool faster.
  7. Drain the leaves and blend to a smooth paste and use as required.
