Ingredients for Whole Wheat Pasta With Walnut Pesto Recipe

  • Wholewheat penne pasta 200 grams

  • Walnut kernels

  • Olive oil 2 tablespoons

  • Baby tomatoes halved 12-14

  • Salt to taste

  • Crushed red chillies 1 teaspoon

  • Walnut pesto

  • Walnut kernels crushed 8-10

  • Basil leaves 3/4 cup

  • Garlic 3-4 cloves

  • Salt to taste

  • Olive oil 2 tablespoons

  • Parmesan cheese grated 4 tablespoons

Method

Step 1

Heat oil in a pan, add the baby tomatoes and salt. Cover and cook.

Step 2

Grind together basil leaves, walnuts, garlic, salt and two tablespoons olive oil till smooth. Add two tablespoons parmesan cheese and grind.

Step 3

Meanwhile boil water in a deep pan. Put the penne in a colander, sprinkle salt and place it in the boiling water. Cover and cook till just done.

Step 4

When the tomatoes soften, crush them with the back of the ladle. Add the walnut pesto, crushed red chillies and mix well. Drain the pasta and add to the pesto sauce and mix well.

Step 5

Sprinkle the remaining parmesan cheese and serve hot immediately.
