Vegan Kulfi - SK Khazana Recipe Card

Ingredients for Vegan Kulfi - SK Khazana Recipe

  • Cashewnuts 1/4 cup

  • Seedless dates 8-10

  • Steel cut oats 2 tablespoons

  • Green cardamoms seeds separated 2-3

  • Thick coconut milk 1 cup


Step 1

Take cashew nuts in a small bowl. Add sufficient water and let them soak for 3-4 hours and then drain.

Step 2

Soak dates in sufficient water in another bowl for 30 minutes and then drain.

Step 3

Put oats and green cardamom seeds in a blender jar and blend to a fine powder.

Step 4

Transfer the soaked cashew nuts in another blender jar, add soaked dates and blend well.

Step 5

Add the oats-green cardamom powder and coconut milk and blend till smooth and thick.

Step 6

Pour the mixture into kulfi moulds, screw on the lids and and keep in the refrigerator for 1 hour. Further keep them in the freezer to set for 7-8 hours or till set.

Step 7

De-mould and serve immediately.
