Ingredients list for Vegan Kulfi - SK Khazana
- 1/4 cup Cashewnuts
- 8-10 Seedless dates
- 2 tablespoons Steel cut oats
- 2-3 Green cardamoms seeds separated
- 1 cup Thick coconut milk
Method
- Take cashew nuts in a small bowl. Add sufficient water and let them soak for 3-4 hours and then drain.
- Soak dates in sufficient water in another bowl for 30 minutes and then drain.
- Put oats and green cardamom seeds in a blender jar and blend to a fine powder.
- Transfer the soaked cashew nuts in another blender jar, add soaked dates and blend well.
- Add the oats-green cardamom powder and coconut milk and blend till smooth and thick.
- Pour the mixture into kulfi moulds, screw on the lids and and keep in the refrigerator for 1 hour. Further keep them in the freezer to set for 7-8 hours or till set.
- De-mould and serve immediately.
