Ingredients list for Vanilla Cupcakes with Nutella Frosting
- 1 1/2 teaspoons Refined Flour
- 1 1/4 cup Buttermilk
- 1/4 cup Butter softened
- 3/4 cup Castor sugar
- 2 Eggs
- 2 tablespoons Cornflour
- A pinch baking powder
- A pinch salt
- 1/2 cup Buttermilk
- for greasing Oil
- for dusting Icing sugar
- for decoration Chocolate chips
- Frosting
- 1/2 cup Nutella
- 2/3 cup Icing sugar
- 1-2 tablespoons Double cream
Method
- Preheat oven at 180°C.
- Combine butter, sugar and vanilla essence in a bowl and beat well till smooth and creamy. Divide the mixture into two parts and reserve one for frosting.
- Add eggs to the remaining part and beat well.
- Add refined flour, cornflour, baking powder and salt and beat again.
- Add buttermilk, little by little and beat well till light and frothy.
- Grease individual cupcake moulds with oil and pour batter in them filling ¾. Place them on a baking tray and put the tray in the preheated oven and bake for 15-18 minutes.
- To make frosting, take the reserved butter-sugar mixture in a bowl. Add icing sugar and mix well.
- Add cream and mix well. Add Nutella and mix well. Beat well with an electric beater.
- Remove cupcakes from the oven and demould. Cool to room temperature.
- Pour the frosting into a piping bag fitted with a star nozzle.
- Pipe out portions on the cupcakes and place them on a serving platter. Dust icing sugar on top and sprinkle some chocolate chips.
- Serve immediately.
