Ingredients list for Tuna Cakes-Cook Smart
- 1 tin Tuna
- 1 Medium onion
- 2 Garlic cloves
- 4 Eggs hard boiled and peeled
- 2 Medium potatoes boiled and peeled
- to taste Salt
- 1 teaspoon Schezwan chutney
- for greasi to shallow fry Oil
- 4-5 Salad leaves
- for garnish Micro greens
Method
- Quarter the onion and roughly chop garlic and put both into a grinder jar. Halve the eggs and put into the grinder jar and grind into a coarse mixture. Transfer mixture into a mixing bowl.
- Strain excess liquid from tuna and add to the ground egg mixture. Grate potatoes into it.Add salt and mix well.
- Add schezwan chutney and mix well. Refrigerate the mixture till chilled.
- Grease your palms with oil. Heat some oil in a non-stick pan.
- Divide the tuna mixture into large equal portions and shape them into cakes. Place these cakes in the pan and shallow-fry, turning sides carefully, till evenly golden on both sides.
- Tear salad leaves and place on a serving platter. Put tuna cakes on it, garnish with some micro greens and serve hot.
