Ingredients

  • 6 medium tomatoes chopped
  • 1/2 cup coconut scraped
  • 2 tablespoons oil
  • 7-8 cloves garlic chopped
  • 2 medium onions chopped
  • 1 1/2 inch piece Ginger grated
  • Salt to taste
  • White pepper powder to taste
  • 4 Bay leaves
  • 7 cup Vegetable stock
  • 2 tablespoons Fresh cream

Method

  1. Heat oil and sauté garlic and onions for a few seconds.
  2. Add scraped coconut and stir fry for a minute.
  3. Add tomatoes and ginger.
  4. Stir in vegetable stock, salt, white pepper powder and bay leaves.
  5. Allow to simmer for fifteen-twenty minutes till the tomatoes are cooked and tender. Remove from heat and allow to cool.
  6. Blend to make a puree and strain.
  7. Place on heat and bring to a boil.
  8. Stir in cream and serve immediately.
