Ingredients list for Tacos With Refried Beans Salsa
- 8 Taco Sheels
- 2 cups Red Kidney Beans soaked
- 3 tablespoons Oil
- to taste Salt
- 10-12 Black peppercorns freshly ground
- 1/4 cup Salsa
- 1/2 cup Cheddar cheese grated
Method
- Put the kidney beans in a large pan. Cover with cold water and bring to a boil. Simmer and cook gently until the beans are very tender. Drain the beans, reserving the cooking liquid. Discard the bay leaf.
- Mash the beans coarsely with a potato masher or process in a blender or food processor, adding some of the reserved liquid. Heat oil in a pan. Add the beans and the seasoning and mix well. Simmer for a few minutes.
- Take the pan off the heat. Keep warm. Take taco shells, spoon prepared refried beans evenly in each shell. Top it up with salsa and then sprinkle cheese and serve immediately.
