Ingredients list for Sweet Pumpkin Sago
- 1/4 cup Red Pumpkin small cubes of peeled
- 1/4 cup Castor Sugar soaked
- 4 tablespoons Palm sugar (coconut sugar)
- 1 cup Castor sugar
- 1 1/2 cups Coconut milk
- 1 teaspoon Vanilla essence
Method
- Heat 1 cup water in a non-stick pan, add pumpkin and mix well. Cover and cook till the pumpkin is half done.
- To make syrup, heat 3 tbsps water in another non-stick pan, add palm sugar and mix well.
- Add castor sugar to the 1st pan. Add coconut milk and vanilla essence and mix well.
- Add sago and mix well. Cover and cook till the pumpkin and sago are done and the mixture thickens.
- Pour the pumpkin sago into a serving bowl, top with palm sugar syrup and serve warm.
