Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Sweet Pumpkin Sago Recipe

  • Red Pumpkin small cubes of peeled 1/4 cup

  • Castor Sugar soaked 1/4 cup

  • Palm sugar (coconut sugar) 4 tablespoons

  • Castor sugar 1 cup

  • Coconut milk 1 1/2 cups

  • Vanilla essence 1 teaspoon


Step 1

Heat 1 cup water in a non-stick pan, add pumpkin and mix well. Cover and cook till the pumpkin is half done.

Step 2

To make syrup, heat 3 tbsps water in another non-stick pan, add palm sugar and mix well.

Step 3

Add castor sugar to the 1st pan. Add coconut milk and vanilla essence and mix well.

Step 4

Add sago and mix well. Cover and cook till the pumpkin and sago are done and the mixture thickens.

Step 5

Pour the pumpkin sago into a serving bowl, top with palm sugar syrup and serve warm.
