Ingredients for Sweet Chilli Lotus Root Recipe

  • Lotus roots well-scrubbed and washed 2

  • Sugar 2 tablespoons

  • Red chilli paste 1 teaspoon

  • Oil 2 tablespo to deep fry

  • Asparagus 5-6

  • Garlic chopped 2 teaspoons

  • Medium onion cubed and layers separated 1

  • Tomato ketchup 2 tablespoons

  • Spring onions with greens 2

  • Salt to taste

  • Vinegar 1 teaspoon

Method

Step 1

Heat sufficient oil in a kadai.

Step 2

Diagonally cut lotus roots into thin slices. Trim asparagus tips and cut the stems into 2 inch pieces.

Step 3

Add lotus roots slices to hot oil and deep-fry.

Step 4

Heat 2 tbsps oil in a non-stick pan, add garlic and saute till golden. Add onion and tomato ketchup and mix. Add asparagus stems and mix.

Step 5

Cut spring onion stems into 1 inch pieces and roughly chop the bulbs and add to the pan and mix well.

Step 6

Add red chilli paste. Drain lotus root slices from hot oil and add to this pan. Add asparagus tips, sugar, salt and vinegar and toss well.

Step 7

Transfer onto a serving platter and serve hot.
