Ingredients list for Stuffed Eggplant Rings-SK Khazana
- Large eggplant
- 2 Medium potatoes boiled, peeled and grated
- 1/2 cup Processed cheese grated
- 1/2 cup Cheddar cheese grated
- 1 teaspoon Red chilli flakes
- to taste Salt
- for greasi Oil
- to sprinkle Panko crumbs
Method
- Preheat oven to 180º C.
- Place a small cookie cutter in the centre of each slice and cut out a circular slice to get a doughnut shaped slice.
- Put the cut out slices in a bowl and mash well.Add potatoes, processed cheese, cheddar cheese, chilli flakes and salt and mix well.
- Grease a baking tray with some oil and place the hollowed eggplant slices on it.
- Stuff the centre portions of each slice with potato mixture, brush some oil and sprinkle some panko crumbs on top.
- Put tray in preheated oven and bake for 15-20 minutes or till the crust turns golden brown.
- Serve hot.
