Ingredients list for Strawberry Shrikhand Fruit Tarts
- 8-10 Strawberries
- 12 Tart Shells
- 1 cup Sugar
- 1 medium Apple peeled and cut into small cubes
- 1 medium Pear peeled and cut into cubes
- 1/2 teaspoon Lemon rind grated
- 7-8 drops Lemon juice
- 1/2 cup Grapes halved
- 1 Ripe banana peeled and sliced
- 1 cup Hung yogurt
- For garnishing
- Few strawberry slices
Method
- Roughly chop strawberries and grind to a purée.
- Heat a non-stick pan, add the purée and ½ cup sugar and cook for 5-6 minutes or till the mixture thickens.
- Transfer half of this mixture into a bowl, cool and chill in the refrigerator.
- Add apple and pear to the mixture remaining in the pan and cook for 4-5 minutes. Add lemon rind, lemon juice and the remaining sugar and cook till the mixture becomes dry. Switch off the heat.
- Add grapes and banana and mix well. Transfer the mixture into another bowl, cool and chill in the refrigerator.
- To make shrikhand, mix together hung curd and chilled strawberry purée. Transfer this shrikhand into a piping bag fitted with a star nozzle.
- Arrange the tart shells on a serving plate. Fill the tarts with the fruit mixture. Pipe the shrikhand over the fruits. Garnish with strawberry slices and serve.
