Ingredients list for Strawberry Crush

  • 500 grams Strawberries
  • 1 kilogram Sugar
  • 1/4 teaspoon Sodium benzoate
  • 1 teaspoon Citric acid
  • a few drops Strawberry essence

Method

  1. Make sugar syrup with one kilogram sugar and half a litre of water. Crush strawberries in a food processor taking care that the pulp does not become too fine.
  2. Mix sodium benzoate in a little water and set aside. Add half of the citric acid to the syrup. The scum will rise to the top. Strain through a strainer lined with muslin cloth to remove impurities.
  3. Cool syrup slightly and add remaining citric acid, crushed strawberries and mix well. Add strawberry essence and stir. Add dissolved sodium benzoate to the mixture and stir well.
  4. Pour into dry and hot sterilized bottles taking care not to fill them up to the rim. Screw on the tops and let them cool down to room temperature before storing.
